Yann Chave took over the family winery from his father Bernard in 1996, and began to move away from supplying the local co-operative winery. Today, the domaine, which covers twenty hectares of vines in Hermitage and Crozes Hermitage, is certified organic. These vines are planted on a section of loess soil with a south-westerly exposure, and have an average age of 30 years. In the summer, Yann trims back the foliage around the bunches to allow as much sunlight as possible to penetrate the canopy, as he strives for optimum ripeness. Natural yeasts are used in the fermentation, with a 3-4 week maceration and a daily pump-over to keep the cap fresh. It is aged in new 600-litre oak demi-muids for 12 months. Deep and powerful, with layers of complex black and red fruits that open up in the glass revealing minerals and savoury truffle notes. Ripe tannins and a fine long finish which will develop further complexity with time. Great value, quality Hermitage.
