Antonio Flores, Gonzalez Byass winemaker in Jerez, has already made a preliminary selection of casks for this, the 8th edition of Tio Pepe En Rama, tasting every single barrel in the Bodegas Constancia and Rebollo. He will undertake a second and final selection in early April. It is worth mentioning that Tio Pepe En Rama has become creamier in texture and shows more crystalline depth of flavour. This is because of the Palomino must originating from the 40-year-old (low yielding) vineyard in the prized Pago of Macharnudo Alto. Also handpicking at night and cask ferment in seasoned Tio Pepe casks gives a wonderful base wine before it undergoes its long Fino maturation.
