Devised by master chef Michel Roux Jr and taking place at his cookery school, this half day knife skills class is taught by a trusted in-house chef. Begin with tea, coffee and pastries while the chef explains what the class entails, as well as giving safety advice. Then it's time to chop, slice, dice and julienne, learning the theory and practise behind the efficient chopping of fruit and vegetables. Concentrate on two vital knives - a cook's knife and a paring knife. During the class, make cheese and herb scones using chopped herbs and chop and prepare your own mirepoix to take home. Afterwards, each enjoy a light lunch or cream tea with Prosecco (served with the afternoon class) and at the end, take home an apron, a tote bag and a knife skills booklet.
