Fermentation of the juice began in stainless steel tanks before the partially fermented juice was transferred to new, two and three year old seasoned French oak barriques (225L) and puncheons (500L). After fermentation, the wine received some lees stirring to enhance the palate structure and texture. No malolactic fermentation used. A medium bodied, fruit driven style that still exhibits crisp citrus and white peach flavours, with a palate that has gained some extra texture from extended maturation on yeast lees. The freshness of this chardonnay makes it a perfect companion to seafood, chicken or pasta dishes. Excellent drinking upon release and will develop bottle age complexity.
