Beautifully fragrant red berry and floral aromas combine with flavours of cherry, spice and earthy undertones on a finely textured palate. Bunches were delivered to the winery in small picking bins, where they were destemmed, lightly crushed, and cold soaked on skins at 10-12°C for 10 days. Ferments were hand plunged allowing gentle extraction of flavour, aroma and colour compounds. To ensure good tannin structure and savoury complexity, some batches were hot fermented to maximise extraction, while others were kept cooler to retain fruit characters. The wine was then pressed and run to French barriques [20% new] where it underwent malolactic fermentation. The wine was left in barrel on gross lees until the following summer in our cooled cellars at which time it was gently egg white fined, minimally filtered, blended and bottled.
