Yellow tea is unique to China's Anhui, Sichuan and Hunan Provinces, where it is painstakingly produced in minute quantities. We've sourced this smooth, subtly smoky and distinctly nutty variety from the Huangshan Mountains of Anhui Province, crafted according to a technique developed by tea masters over several centuries. After being wok-fired in the manner of a classic Chinese green tea, yellow tea is placed in huge baskets surrounded by stoves of smouldering coal and baked over the course of several days. The leaves are carefully turned at intervals, and the process can take up to a week to complete. The rarity of yellow tea reflects the time and skill it takes to produce - it might be tricky to track down, but no tea connoisseur would be without it. With its delicately roasted notes, you could compare it to smoky Chinese teas like Lapsang and Yunnan, but the mellow sweetness and light levels of oxidation place it in a class of its own. High in the antioxidant EGCG and reputed to promote a youthful complexion, we think yellow tea is set to be the next big thing. The Great Taste Awards have been described as the Oscars of the food worldso you can imagine we were pretty chuffed when our Yellow Sun won a coveted two star award this year. The judges called it clean, delicate, gentle with some woodiness and sweetness on the finish. The flavour stays with you.
